Long time listener, first time caller, I’m finally diving into trying to cook Mexican food at home. Punctuated by a trip to Mexico where we visited CDMX, Oaxaca and Guadalajara. A lot of my favorite Mexican foods come from Oaxaca or Jalisco state — a recent obsession with birria comes to mind.
